How can I make print out or a PDF of usertext from an inputfield?

I want to let my students write their reflections in several input fields and store the whole text in a PDF. It was possible in Captivate some years ago.

Did you try the Notes Learning Interaction? If I understand your question correctly this would be perfect. You cannot control which device will be used for printing, but to pdf is always possible.
